Freezer Batch Burritos

Burritos aren’t the healthiest, especially frozen ones, but they sure are filling and convenient. Making them yourself also grants a bit more control over what goes into them. Forget to make a meal? Got a little lazy? Never fear! Burrito is here! This recipe was inspired by Ian Sloan.

Ingredients

  • 5 can black beans
  • 5 cup cooked rice (brown or white)
  • ½ block of chedder cheese
  • 2 can olives
  • 16 oz greek yogurt
  • 3 Tbsp hot sauce
  • 5 cup cooked and chopped chicken (optional)
  • 30 tortilla

Preparation

    Combine all ingredients into a large bowl.

    Use your largest bowl. You may need to use multiple if your bowl isn't large enough.

    Mix ingredients in bowl with hands until well mixed. It should look something like the picture below.

    Scoop some mixture into a tortilla and fold into burrito.

    Put burrito on a plate to the side.

    Repeat steps 3-4 until there is no more mixture left. This should leave you with several stacks of burritos.

    Place burritos into plastic bags and store them in the freezer.

    Several plastic bags may be needed.

    When you desire to eat a burrito, remove one from a bag in the freezer, microwave it for 4 minutes, then broil in the oven until the outside is crispy (about 2 minutes).
