Molasses Cookies

Molasses cookie recipe by Bon Appetit. Great savory cookie that’s not overwhelmingly sweet. Thank you to Margeaux for sharing this one with me!

Ingredients

  • 2 cup all-purpose flour
  • 2 tsp baking soda
  • 1 ½ tsp ground cinnamon
  • 1 tsp ground ginger
  • ¾ tsp ground cardamom
  • ½ tsp kosher salt
  • 1 egg
  • 1 stick unsalted butter, melted
  • cup granulated sugar
  • cup mild-flavored (light) or robust-flavored (dark) molasses
  • ¼ cup dark brown sugar
  • 1 cup Course sanding, turbinado, or raw sugar (for rolling)

Preparation

    Preheat the oven to 375 degrees.

    Prepare cookie sheets with parchement paper (or just rub them with butter or oil to prevent stick).

    Mix the dry ingredients (flour, baking soda, cinnamon, ginger, cardamom, salt) in bowl and set aside.

    Whisk the butter, egg, sugar, molasses, and brown sugar in a medium bowl.

    Mix in dry ingredients just to combine.

    Place sanding/coarse sugar in a shallow bowl.

    Scoop out tablespoonful balls, roll in sugar, and place in pans with 2 inch apart spacing.

    Bake cookies until puffed, cracked, and just set around edges. This will be around 8-10 minutes.

    Transfer cookies to wired racks and let cool.
